🥘 Keto Casserole Recipe with Homemade Cream of Mushroom Soup
This casserole is a nourishing blend of low-carb vegetables, creamy mushroom sauce, and nutritional yeast for added flavor and nutrition.


Ingredients (serves 4):

2 cups broccoli florets

1 cup cauliflower florets

1 small zucchini, sliced

1 cup sliced mushrooms

2 Tbsp butter or ghee

½ cup heavy cream

¼ cup broth (chicken or veggie)

3 Tbsp nutritional yeast (Dr. Berg’s recommended)

1 tsp garlic powder

Salt & pepper to taste

Optional: pinch of thyme or oregano


Directions:

Prep veggies and steam or lightly sauté until just tender.

Make mushroom soup base: Melt butter in a pan, sauté mushrooms. Whisk in cream, broth, garlic powder. Simmer 2–3 minutes, then stir in nutritional yeast until thickened.

Assemble casserole: Mix veggies in baking dish, pour sauce over. Sprinkle optional extra nooch on top.

Bake at 350 °F for ~15 minutes until bubbly. Serve warm.

Vegan/dairy-free substitute: Use coconut milk and olive oil instead of cream and butter.
