I learned this the hard way. If I’m going to live keto—and age gracefully while doing it—I want to use fats that protect my heart, support my blood pressure, nourish my brain, and still give me the rich flavor I love.

Blissfully Simple Raspberry Ice Cream (No-Churn)


1 ripe avocado

1 cup frozen raspberries

½–¾ cup full-fat coconut milk (or almond milk if preferred)

A dash of vanilla extract and a keto-friendly sweetener like monk fruit or stevia to taste


Blend all ingredients in a food processor or high-speed blender until smooth and creamy. Adjust coconut milk for consistency—less for a firm texture, more for a soft-serve feel. Pour into a container and freeze for about 2 hours (or enjoy it immediately like soft-serve).


Pro Tip: Full-fat coconut milk lends a creamy ice cream mouthfeel, while the avocado contributes healthy fat and a subtle richness that complements the flavor without overpowering it.
