Keto Mock Potato Soup with Cheddar Cheese

Creamy keto mock potato soup made with cauliflower, carrots, celery, and cheddar cheese, served with slices of homemade keto bread.

A warm bowl of creamy Keto Mock Potato Soup filled with cauliflower, carrots, celery, and cheddar cheese, served with homemade keto bread for a hearty low-carb comfort meal.

A Thick and Creamy Low-Carb Comfort Soup with Cauliflower, Carrots, and Cheddar

A steaming bowl of thick potato soup topped with melted cheddar cheese is classic comfort food. Unfortunately, potatoes contain enough carbohydrates that a traditional potato soup can quickly use up a large portion of your daily carbohydrate allowance on a keto lifestyle.

But you don't actually need potatoes to make a hearty, creamy soup.

This Keto Mock Potato Soup uses cauliflower to create the texture and creaminess of potato soup while keeping the carbohydrate count considerably lower. A small amount of carrot adds color and natural sweetness, celery and onion add traditional soup flavor, and sharp cheddar transforms everything into a rich, satisfying meal.

Best of all, you don't need flour, cornstarch, or xanthan gum to thicken it.

The cauliflower does the job naturally.

Why Cauliflower Works as a Potato Substitute

Cauliflower has a mild flavor and becomes wonderfully tender when simmered in broth.

Instead of blending the entire pot until smooth, only part of the cooked cauliflower is blended. The pureed cauliflower thickens the broth while the remaining florets provide soft, chunky pieces throughout the soup.

This combination creates a texture much closer to hearty potato soup.

Keto Mock Potato Soup with Cheddar Cheese

Makes approximately 6 servings

Ingredients

1 large head cauliflower, cut into small florets, approximately 6 cups

1/2 cup carrots, peeled and diced

1/2 cup celery, diced

1/3 cup onion, finely chopped

2 cloves garlic, minced

3 tablespoons butter

4 cups low-sodium chicken broth or vegetable broth

1 cup heavy whipping cream

2 cups freshly shredded sharp cheddar cheese

1/2 teaspoon dried thyme

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Salt to taste, if desired

Optional Toppings

Additional shredded cheddar cheese

Chopped green onions

Sour cream

Crumbled cooked bacon

Fresh parsley

Preparing the Vegetables

Cut the cauliflower into relatively small florets.

For a potato-like appearance, don't make every piece the same size. Leave some pieces a little larger so they remain chunky after cooking.

Dice the carrots and celery into small pieces.

Finely chop the onion so it blends into the finished soup rather than dominating each spoonful.

Making the Soup

Melt the butter in a large soup pot over medium heat.

Add the onion, celery, and carrots.

Cook for approximately 5 minutes, stirring occasionally, until the vegetables begin to soften.

Add the minced garlic and cook for another 30 seconds.

Add the cauliflower and broth.

Stir in the thyme, garlic powder, and black pepper.

Bring the soup to a gentle boil.

Reduce the heat, cover partially, and simmer for approximately 15 to 20 minutes or until the cauliflower and carrots are tender.

Creating That Thick Potato-Soup Texture

Remove approximately 2 cups of the cooked cauliflower along with some of the broth.

Carefully blend until smooth.

Return the cauliflower puree to the soup pot and stir.

This simple step transforms the broth.

The pureed cauliflower naturally thickens the soup without flour, cornstarch, or other starch-based thickeners.

You still have plenty of whole cauliflower pieces remaining in the pot, giving every bowl the chunky texture you would expect from potato soup.

Making It Creamy and Cheesy

Reduce the heat to low.

Add the heavy whipping cream and stir until incorporated.

Gradually add the shredded cheddar cheese, stirring between additions.

Keep the heat low while adding the cheese. Boiling cheese soup can cause the cheese and dairy to separate and create a grainy texture.

Continue stirring until the cheddar has completely melted and the soup is creamy.

Taste and adjust the seasonings.

If you use a salted broth and cheddar cheese, you may find that the soup doesn't need additional salt.

Why Sharp Cheddar Works So Well

Sharp cheddar provides plenty of cheese flavor.

Because its flavor is stronger than mild cheddar, it stands up beautifully to the cauliflower, cream, and vegetables.

For the smoothest soup, shred cheese from a block rather than using packaged pre-shredded cheese. Packaged shredded cheese often contains anti-caking ingredients that can affect how smoothly it melts.

Make It a Loaded Keto Mock Potato Soup

This soup is delicious straight from the pot, but toppings can turn it into something that feels like a loaded baked potato in a bowl.

Add a spoonful of sour cream.

Sprinkle shredded cheddar over the top.

Add chopped green onion.

If you eat bacon, add a small amount of crumbled cooked bacon.

You can also add chopped parsley for fresh color.

What to Serve with Keto Mock Potato Soup

A thick bowl of soup is wonderful on its own, but homemade keto bread makes it even more satisfying.

Serve your soup with a slice of toasted Keto Sandwich Bread for dipping into the creamy cheddar broth.

A simple green salad also makes a refreshing side dish and turns a bowl of soup into a complete lunch or dinner.

Storing Leftover Soup

Allow leftover soup to cool before transferring it to an airtight container.

Store it in the refrigerator for approximately 3 to 4 days.

Reheat gently over low heat, stirring occasionally.

Avoid bringing the soup to a hard boil when reheating because the cream and cheddar can separate.

If the refrigerated soup becomes thicker than you prefer, stir in a small amount of broth or cream while reheating.

A Comforting Soup Without the Potatoes

One of the best things about keto cooking is discovering that familiar comfort foods don't always have to disappear.

Sometimes they simply need a different foundation.

In this soup, cauliflower takes over the job traditionally performed by potatoes. Some of it remains chunky while some becomes the creamy base that thickens the broth.

Add carrots, celery, garlic, cream, butter, and plenty of sharp cheddar, and you have a hearty soup that doesn't feel like something is missing.

On a chilly day, serve it steaming hot with a slice of toasted homemade keto bread.

You may discover that you don't miss the potatoes nearly as much as you expected.

Soft Keto Almond Flour Tortillas (No Xanthan Gum!)

Homemade keto almond flour tortillas stacked on a plate with melted butter, served with avocado, salsa, and lime wedges.

Soft, flexible keto tortillas made with superfine almond flour and psyllium husk powder — delicious hot from the pan with butter!

Easy stovetop tortillas made with psyllium husk powder — flexible, delicious, and perfect for wraps, tacos, and quesadillas.

If you’ve been missing tortillas on the Keto Diet, I’m about to make you very happy.

These keto tortillas are made with superfine almond flour, and they do NOT use xanthan gum. Instead, we’re using psyllium husk powder, which helps bind the dough and gives the tortillas a more flexible, “real tortilla” feel.

They’re easy to make, cook right in a skillet, and taste incredible fresh from the pan. Honestly, my favorite way to eat them is hot with butter — simple, comforting, and totally satisfying.

And the best part? Once you have a stack of these ready, you can use them for just about anything:

Tacos

Quesadillas

Breakfast wraps

Chicken salad wraps

Tuna salad wraps

Deli meat roll-ups

Snack wraps with veggies and dip

Let’s make them!

Soft Keto Almond Flour Tortillas Recipe (with Psyllium Husk Powder)

Ingredients (Makes 6 small tortillas or 4 medium)

1 cup superfine almond flour

1 tbsp psyllium husk powder (not whole husks)

1/2 tsp baking powder (optional for softness)

1/4 tsp sea salt (optional)

2 tbsp olive oil OR melted butter

1/2 cup hot water (very warm, not boiling)

Optional add-ins (for flavor):

1/4 tsp garlic powder

1/4 tsp onion powder

pinch of cumin (for tacos)

Step-by-Step Instructions

Step 1: Mix the dry ingredients

In a bowl, whisk together:

superfine almond flour

psyllium husk powder

baking powder

salt

Step 2: Add oil + hot water

Add olive oil (or melted butter), then pour in the hot water.

Stir quickly with a spoon until a dough forms.

Step 3: Let the dough rest

Let the dough sit for 3–5 minutes so the psyllium can thicken and bind the dough.

The dough should feel soft and pliable — not crumbly.

If it seems dry, add 1 teaspoon water at a time.

If it’s too sticky, sprinkle in a tiny bit more almond flour.

Step 4: Divide and roll

Divide dough into 4–6 balls.

Place one ball between two sheets of parchment paper and roll into a circle using a rolling pin.

Tip: Don’t roll too thin. Almond flour tortillas do best at medium thickness.

Step 5: Cook in a hot skillet

Heat a nonstick or cast iron skillet over medium heat.

Cook each tortilla about:

1–2 minutes on the first side

Flip and cook 30–60 seconds on the second side

Watch closely — almond flour browns fast.

Step 6: Keep warm

Stack cooked tortillas under a clean towel to keep them soft and warm or use a tortilla cozy.

Quick Troubleshooting Notes

Dough too dry or crumbly? Add 1 tsp hot water at a time.

Dough too sticky? Sprinkle 1 tsp of almond flour and knead.

Tortillas cracking while rolling? Let the dough rest 2 minutes longer.

How To Use Keto Almond Flour Tortillas

These tortillas are incredibly versatile and hold fillings beautifully.

Below are my favorite ways to serve them:

1) Taco Night

Fill with:

seasoned ground turkey or beef

lettuce + tomato

avocado

salsa

2) Keto Quesadillas

Add cheese + cooked chicken to one tortilla, fold, and toast in the skillet until crispy.

3) Chicken Salad Wrap

Chicken salad + chopped celery + a little mustard or keto mayo = perfect lunch wrap.

4) Tuna Salad Tortilla Wrap

Tuna salad + spinach + pickles = delicious and filling.

5) Eat Hot with Butter

This may be the most underrated keto comfort food.

Eat them fresh off the skillet with butter melting into the tortilla. It’s heavenly.

Storage Tips

Store in the fridge for up to 5 days in an airtight container.

Reheat in a skillet for the best texture.

Freezer tip: Place parchment between tortillas, seal in a freezer bag, and freeze up to 2 months.

Keto doesn’t have to mean “giving up everything.” Recipes like this are proof.

These soft almond flour tortillas with psyllium husk powder are simple, flexible, and satisfying — and they work with just about every keto filling you can think of.

If you try them, you’ll probably want to keep a batch ready in your fridge all week!
