Here’s how I make mine:
Blissfully Simple Raspberry Ice Cream (No-Churn)
1 ripe avocado
1 cup frozen raspberries
½–¾ cup full-fat coconut milk (or almond milk if preferred)
A dash of vanilla extract and a keto-friendly sweetener like monk fruit or stevia to taste
Blend all ingredients in a food processor or high-speed blender until smooth and creamy. Adjust coconut milk for consistency—less for a firm texture, more for a soft-serve feel. Pour into a container and freeze for about 2 hours (or enjoy it immediately like soft-serve).
Pro Tip: Full-fat coconut milk lends a creamy ice cream mouthfeel, while the avocado contributes healthy fat and a subtle richness that complements the flavor without overpowering it.
