Keto Lemon Pudding Without Lemon Extract

There’s nothing quite as refreshing as the bold, zesty flavor of lemon, especially in the summertime. This Keto Lemon Pudding is unlike any you’ve had before, because all the flavor comes straight from nature: real lemon peel, finely ground to release its oils and natural citrus aroma. No artificial lemon flavoring needed here!

I blend one full cup of freshly ground lemon peel in a food processor, then simmer it in a saucepan with one can of full-fat coconut milk, 1 teaspoon of vanilla, and ¼ cup of Truvia (or your preferred keto-friendly sweetener). Once the flavors have combined and the sweetener has dissolved, I stir in 2 teaspoons of xanthan gum to thicken. Occasionally, I’ll add an egg to enrich the pudding and make it even more satisfying.

Once the pudding is smooth and thickened, I remove it from the heat and let it cool. As it rests, it continues to set into a luscious, spoonable dessert. For an elegant finish, I serve each portion topped with a few fresh raspberries and a sprig of mint.
