Day 2:

Days 3–5:

Keto Sourdough Bread Using My Basic Keto Bread Recipe

Basic Plain Keto Sourdough Bread (Rises Up to 5 Inches!)
Ingredients
Dry Ingredients:
1 cup blanched almond flour
1 cup all-purpose almond flour
2 tablespoons ground flaxseed
½ teaspoon salt (optional)
½ teaspoon baking soda
1 teaspoon baking powder
½ cup coconut flour
1 tablespoon psyllium husk powder
Wet Ingredients:
6 tablespoons olive oil or coconut oil
4 eggs, room temperature
3 tablespoons organic apple cider vinegar with the mother
1 cup strong-brewed rooibos tea
(2 teaspoons rooibos steeped for 5 minutes)
¼ cup full-fat sour cream
OR
½ cup Greek yogurt, almond yogurt, coconut cream, canned coconut milk, or canned condensed milk
Sourdough Add-In:
1–2 tablespoons sourdough starter (traditional or keto starter)
Instructions:
Preheat oven to 350°F. Line an 8.5 × 4.5" loaf pan with parchment.
Combine dry ingredients:
Almond flours, ground flaxseed, coconut flour, psyllium, salt, baking soda, and baking powder.
Whisk the wet ingredients:
Eggs, oil, ACV, rooibos tea, sour cream or yogurt, plus the sourdough starter.
Mix wet into dry:
Pour the wet mixture into the dry ingredients.
Gently mix until moistened — the batter will appear thin at first, but it will thicken as the psyllium absorbs the moisture.
Tip: Avoid overmixing, as this can prevent the bread from rising properly.
Let stand
Allow the batter to rest for 5 minutes to develop its structure.
Pour into pan
Optionally top with hemp seeds or sliced almonds.
Bake 25–30 minutes
Bake until a tester comes out clean.
Cool completely
