Ingredients

1 ½ cups blanched almond flour

¼ cup butter, melted

2 tbsp powdered Truvia (or erythritol)

½ tsp vanilla extract

Pinch of cinnamon (optional but flavorful)


Creamy Millionaire Filling (No Fruit)

8 oz cream cheese, softened

½ cup sour cream

½ cup powdered Truvia

1 tsp vanilla extract

1 tbsp lemon juice (for brightness)

½–1 tsp lemon zest

¾ cup heavy cream, whipped to stiff peaks

¼ cup chopped pecans (or walnuts)

2–3 tbsp unsweetened shredded coconut

Pinch of salt

Instructions

1. Make the Crust

Combine almond flour, melted butter, sweetener, vanilla, and cinnamon.

Press firmly into an 8–9" pie dish using the back of a spoon.

For best results, bake at 350°F for 8–10 minutes, then cool completely.
(You may also use it unbaked for a softer, creamier pie.)

2. Prepare the Filling

Beat cream cheese, sour cream, sweetener, vanilla, lemon juice, and lemon zest until smooth and fluffy.

Gently fold the whipped heavy cream into the cream cheese mixture.

Stir in the chopped pecans and coconut.

Taste and adjust the sweetness or lemon if desired.

3. Assemble the Pie

Spoon the creamy filling into your cooled crust.

Smooth the top evenly.

Refrigerate for at least 4 hours, or overnight, for perfect firmness.
