A simple low-carb comfort food made with fresh cabbage, onion, and garlic — crispy, flavorful, and completely carrot-free.

If you’re eating keto and want something comforting, budget-friendly, and satisfying, cabbage fritters are a wonderful option. They’re simple to make, naturally low in carbs, and incredibly versatile.

I purposely skip carrots in this recipe because they add extra carbs and sweetness that aren’t always ideal for keto eating. Instead, we focus on the flavor trio that really makes cabbage shine: fresh-sliced cabbage, chopped onion, and fresh garlic. The result is savory, hearty fritters that work beautifully as a side dish, snack, or even a light meal.

Why Cabbage Works So Well On Keto

Cabbage is one of those underrated keto vegetables. It’s:

Low in net carbs

Budget-friendly year-round

Filling without heaviness

Easy to season in many ways

Plus, cabbage absorbs flavors beautifully, especially onion and garlic.

Keto Cabbage Fritters Recipe

(No carrots — just simple savory goodness)

Ingredients

3 cups sliced green cabbage (thinly sliced works best)

¼ cup finely chopped onion

2 cloves fresh garlic, minced

2 large eggs

¼ cup almond flour (fine blanched almond flour works best)

2 tablespoons grated Parmesan (optional, but adds flavor)

½ teaspoon black pepper

Pinch paprika or garlic powder (optional)

Oil for cooking (avocado oil, olive oil, or butter)

Optional add-ins: chopped herbs, diced cooked bacon, or shredded cheese.

Instructions

1. Prepare the cabbage

Slice cabbage thinly. If the strands are long, cut them into shorter pieces so the fritters hold together better.

2. Soften slightly (optional but helpful)

Lightly salt the cabbage and let it sit 10 minutes, then squeeze out the moisture. This step helps crisp fritters.

3. Mix the batter

In a bowl, combine:

cabbage

chopped onion

minced garlic

eggs

almond flour

Parmesan (if using)

pepper and seasonings

Mix until everything is evenly coated.

4. Heat your skillet

Medium heat works best. Add enough oil to lightly coat the pan.

5. Form fritters

Drop spoonfuls into the skillet and flatten slightly.

6. Cook until golden

About 3–4 minutes per side until browned and cooked through.

7. Drain briefly and serve warm.

Serving Ideas (Keto Friendly)

These cabbage fritters pair beautifully with:

Sour cream or avocado crema

Sugar-free hot sauce

A fresh green salad

Grilled chicken or pork

They’re also excellent reheated, making them a great option for prep-ahead meals.

Tips For Best Results

Slice cabbage thin — thick chunks don’t bind well.

Don’t overcrowd the pan.

If batter seems loose, add a little more almond flour.

Cook at medium heat so they crisp without burning.

Simple recipes like this are exactly why keto doesn’t have to be complicated. A humble cabbage, a little onion, fresh garlic, and a few pantry ingredients come together to make something truly satisfying.

This budget-friendly comfort food is definitely worth keeping in your regular rotation.
