2 teaspoons baking powder
1/2 teaspoon baking soda
5 large eggs, room temperature
2 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
1 1/4 cups warm water, approximately 105°F to 110°F
Optional: 1 tablespoon sesame or sunflower seeds for the top
No sugar is necessary for this recipe. The yeast is being used primarily to contribute flavor, aroma, and additional lift to the loaf.
Directions
Preheat the oven to 350°F.
Line an 8 1/2 x 4 1/2-inch loaf pan with parchment paper, leaving enough parchment on the sides to make removing the bread easier.
In a large mixing bowl, combine the almond flour, ground flaxseed, psyllium husk powder, instant yeast, baking powder, and baking soda.
Mix thoroughly so the psyllium and leavening ingredients are evenly distributed.
In another bowl, whisk the eggs until well blended. Add the apple cider vinegar and olive oil.
Slowly stir the warm water into the wet ingredients.
Pour the wet mixture into the dry ingredients and stir until a thick bread dough forms. Psyllium absorbs liquid quickly, so allow the mixture to rest for about 2 to 3 minutes.
Transfer the dough to the prepared loaf pan.
Use damp fingers or a spatula to gently shape and smooth the top. Do not pack the dough tightly into the pan because you want to preserve as much air in the mixture as possible.
Sprinkle sesame seeds over the top if desired.
Allow the loaf to rest in a warm location for approximately 20 to 30 minutes. You may notice the dough becoming slightly fuller and puffier rather than dramatically doubling in size.
Bake for approximately 50 to 60 minutes.
The loaf should be firm and nicely browned. If the top begins browning too quickly, loosely cover it with foil during the final portion of baking.
Remove the bread from the pan and allow it to cool completely on a wire rack.
This step is especially important.
Do not slice keto bread while it is still warm. Psyllium-based bread continues developing its structure as it cools. Cutting it too soon can make the center appear gummy even when the loaf is fully baked.
For the cleanest sandwich slices, allow the loaf to cool for at least 2 hours.
Getting Thin, Even Sandwich Slices
A completely cooled loaf is much easier to slice than a warm one.
Use a long, sharp serrated bread knife and gently saw through the loaf without pressing down on it.
For even thinner slices, refrigerate the cooled loaf before slicing. The colder bread becomes firmer and easier to cut cleanly.
