A Thick and Creamy Low-Carb Comfort Soup with Cauliflower, Carrots, and Cheddar
A steaming bowl of thick potato soup topped with melted cheddar cheese is classic comfort food. Unfortunately, potatoes contain enough carbohydrates that a traditional potato soup can quickly use up a large portion of your daily carbohydrate allowance on a keto lifestyle.
But you don't actually need potatoes to make a hearty, creamy soup.
This Keto Mock Potato Soup uses cauliflower to create the texture and creaminess of potato soup while keeping the carbohydrate count considerably lower. A small amount of carrot adds color and natural sweetness, celery and onion add traditional soup flavor, and sharp cheddar transforms everything into a rich, satisfying meal.
Best of all, you don't need flour, cornstarch, or xanthan gum to thicken it.
The cauliflower does the job naturally.
Why Cauliflower Works as a Potato Substitute
Cauliflower has a mild flavor and becomes wonderfully tender when simmered in broth.
Instead of blending the entire pot until smooth, only part of the cooked cauliflower is blended. The pureed cauliflower thickens the broth while the remaining florets provide soft, chunky pieces throughout the soup.
This combination creates a texture much closer to hearty potato soup.
Keto Mock Potato Soup with Cheddar Cheese
Makes approximately 6 servings
Ingredients
1 large head cauliflower, cut into small florets, approximately 6 cups
1/2 cup carrots, peeled and diced
1/2 cup celery, diced
1/3 cup onion, finely chopped
2 cloves garlic, minced
3 tablespoons butter
4 cups low-sodium chicken broth or vegetable broth
1 cup heavy whipping cream
2 cups freshly shredded sharp cheddar cheese
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Salt to taste, if desired
Optional Toppings
Additional shredded cheddar cheese
Chopped green onions
Sour cream
Crumbled cooked bacon
Fresh parsley
Preparing the Vegetables
Cut the cauliflower into relatively small florets.
For a potato-like appearance, don't make every piece the same size. Leave some pieces a little larger so they remain chunky after cooking.
Dice the carrots and celery into small pieces.
Finely chop the onion so it blends into the finished soup rather than dominating each spoonful.
Making the Soup
Melt the butter in a large soup pot over medium heat.
Add the onion, celery, and carrots.
Cook for approximately 5 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30 seconds.
Add the cauliflower and broth.
Stir in the thyme, garlic powder, and black pepper.
Bring the soup to a gentle boil.
Reduce the heat, cover partially, and simmer for approximately 15 to 20 minutes or until the cauliflower and carrots are tender.
Creating That Thick Potato-Soup Texture
Remove approximately 2 cups of the cooked cauliflower along with some of the broth.
Carefully blend until smooth.
Return the cauliflower puree to the soup pot and stir.
This simple step transforms the broth.
The pureed cauliflower naturally thickens the soup without flour, cornstarch, or other starch-based thickeners.
You still have plenty of whole cauliflower pieces remaining in the pot, giving every bowl the chunky texture you would expect from potato soup.
Making It Creamy and Cheesy
Reduce the heat to low.
Add the heavy whipping cream and stir until incorporated.
Gradually add the shredded cheddar cheese, stirring between additions.
Keep the heat low while adding the cheese. Boiling cheese soup can cause the cheese and dairy to separate and create a grainy texture.
Continue stirring until the cheddar has completely melted and the soup is creamy.
Taste and adjust the seasonings.
If you use a salted broth and cheddar cheese, you may find that the soup doesn't need additional salt.
Why Sharp Cheddar Works So Well
Sharp cheddar provides plenty of cheese flavor.
Because its flavor is stronger than mild cheddar, it stands up beautifully to the cauliflower, cream, and vegetables.
For the smoothest soup, shred cheese from a block rather than using packaged pre-shredded cheese. Packaged shredded cheese often contains anti-caking ingredients that can affect how smoothly it melts.
Make It a Loaded Keto Mock Potato Soup
This soup is delicious straight from the pot, but toppings can turn it into something that feels like a loaded baked potato in a bowl.
Add a spoonful of sour cream.
Sprinkle shredded cheddar over the top.
Add chopped green onion.
If you eat bacon, add a small amount of crumbled cooked bacon.
You can also add chopped parsley for fresh color.
What to Serve with Keto Mock Potato Soup
A thick bowl of soup is wonderful on its own, but homemade keto bread makes it even more satisfying.
Serve your soup with a slice of toasted Keto Sandwich Bread for dipping into the creamy cheddar broth.
A simple green salad also makes a refreshing side dish and turns a bowl of soup into a complete lunch or dinner.
Storing Leftover Soup
Allow leftover soup to cool before transferring it to an airtight container.
Store it in the refrigerator for approximately 3 to 4 days.
Reheat gently over low heat, stirring occasionally.
Avoid bringing the soup to a hard boil when reheating because the cream and cheddar can separate.
If the refrigerated soup becomes thicker than you prefer, stir in a small amount of broth or cream while reheating.

A Comforting Soup Without the Potatoes
One of the best things about keto cooking is discovering that familiar comfort foods don't always have to disappear.
Sometimes they simply need a different foundation.
In this soup, cauliflower takes over the job traditionally performed by potatoes. Some of it remains chunky while some becomes the creamy base that thickens the broth.
Add carrots, celery, garlic, cream, butter, and plenty of sharp cheddar, and you have a hearty soup that doesn't feel like something is missing.
On a chilly day, serve it steaming hot with a slice of toasted homemade keto bread.
You may discover that you don't miss the potatoes nearly as much as you expected.
